Chocolate Porridge. Oh me, oh my! It’s a sensation in my house. I first made it for the kids on a crazy whim one morning and they are H-O-O-K-E-D.
And I’m ok with it. It’s loaded full of good fats and fibres and recharges them for a big day of learning and play. All my kids love regular porridge and they eat it many mornings a week, but I do worry that they will get sick of it and so am thrilled to have another version in the repertoire that they adore. Long live oats, I say!
Serves 1 (just double or triple the recipe according the number of mouths you are feeding)
1/3 cup rolled oats
3 Medjool dates – deseeded
1 teaspoon raw cacao powder
1 tablespoon almond meal or LSA powder
1 cup unsweetened almond and coconut milk – or more
Cinnamon, yoghurt and strawberries to serve
Finely chop Medjool dates to a mush. Place all ingredients in saucepan over medium heat. Stir occasionally for 5-10 minutes until thickened and oats are cooked. You may need to add more liquid throughout cooking – water is fine.
Serve sprinkled with cinnamon. My kids love it with a dollop of natural Greek yogurt and fresh strawberries.
