I recently stumbled across One Change a Week on Facebook. I love their concept and passion for spreading the word about healthy eating and the benefits it can have on your whole life.

One Change a Week are two friends – Marit and Erika – who share a similar passion for all things healthy for both the mind and body. They are on a journey to better our knowledge of how to feed the body and mind with natural foods as well as removing nasties from the outside world. They created One Change a Week to share their knowledge and help others to improve their health and well-being.

Their recipes are so simple and a healthy alternative to processed snacks. Here is the first recipe.

Raw Carrot Bites – by One Change a Week

Hmm … doesn’t the name just say it all. These are quite possibly one of the tastiest ways to eat vegetables! Loaded with walnuts, dates, and carrots, they are full of healthy fats and oh so many vitamins and minerals. At my house, we even eat them for breakfast!



1-1/2 cups of desiccated coconut
1/2 cup walnuts
3 small carrots, roughly chopped
10 medjool dates, pitted
1 tsp cinnamon
1/2 tsp vanilla extract
pinch of salt



1. Pop all ingredients in a food processor and pulse until smooth.
2. Roll into balls and coat in extra coconut.
3. Pop into fridge to set.
