Mushroom Soup

Suitable from about 3rd month of eating.

Ingredients

  • 20g butter
  • 1 small brown onion, peeled and diced
  • 1 small brown onion, peeled and diced
  • 1 clove garlic, peeled and roughly chopped
  • 500 g mushrooms button, field or swiss or a combination of all three, roughly chopped
  • 400 ml chicken stock or use a low salt cube, powder or liquid stock
  • Handful of parsley leaves
  • 100 ml cream
  • S+P to taste for mum and dad

Notes

if you want to make a milder soup then halve the mushroom quantities and add a diced potato instead.

Method

    Heat a saucepan over medium heat and add butter. Add garlic and onion and sauté for 5 mins. Add mushrooms, stock and parsley, simmer for 10 minutes. Blend until smooth. You can use a stick blender or transfer to a food blender. The longer you blend the smoother and silkier the soup.

    Stir in cream and taste. Serve and freeze remaining in portions using Freezer Pods or Qubies.

    Perfect with warm toast soldiers, croutons or simply fresh grainy bread.
