One Pot Pasta

Pasta cooked in the sauce with the flavour completely infused through the pasta itself. You still get the flavour and the goodness even if you try to pass on the sauce.

Ingredients

  • 2 rashers bacon, diced
  • 2 chicken tenderloins, or about half a breast diced into 1cm cubes
  • 1 clove of garlic minced
  • 1 small onion, diced
  • 1 cup chicken stock
  • 1/2 tin diced tomatoes
  • 1 cup spiral pasta (I like spiral as the shape really helps hold the sauce)
  • 1/2 cup grated tasty cheese
  • 1 TBS BBQ sauce (optional)

Notes

Makes a great messy finger food so make sure your little one is covered up with Feeding Smock and Bib and you have a drop sheet on the floor! Can be frozen in portions.

    Heat a medium to large fry pan over medium heat, preferably one that has a lid. Add olive oil and saute onion for 5 minutes. Add garlic for 1 minute.

    Add stock, tomatoes milk and pasta. Stir. Cover with a lid or if you don’t have one, use foil to make a lid, or even a baking tray. Simmer for 10 minutes.

    Add bacon and chicken pieces. Stir and simmer covered for another 5 minutes. Stir in cheese and BBQ sauce and serve.
