Pesto and Ricotta Pasta

Ingredients

  • 1/4 cup dried soup pasta or other small pasta shape (approx 1/2-1 cup cooked pasta if using left over). My preference is the little star pasta shapes. Kids love them.
  • 1/4 tsp commercial pesto (buy the best one you can find as there is a huge difference in them)
  • 2 tsp ricotta cheese
  • Generous sprinkling of grated parmesan cheese

  • 1

    For the pasta - bring water to a boil in a small saucepan and cook pasta according to packet directions. Drain, reserving a little of the cooking water and return to saucepan.

    Combine pesto and cheese in a bowl and stir into cooked pasta. Serve.

    Variations: Add a small handful of finely-chopped baby spinach leaves (about 5 leaves) to the pasta water 30 seconds before draining to wilt. Continue as above.

    If you have a roast chook on hand, a spoon of finely-chopped cold roast chicken is a lovely addition.
