Quinoa

Quinoa is the superfood with complete protein.

Ingredients

  • 1 cup Quinoa, rinsed
  • 1.5 cups home-made chicken stock

Notes

Cooked like this, you can use it for salads, as a rice substitute or as a base for burgers and patties.

Alternatively, use plain water for use in sweet and breakfast-style dishes.

Cooked quinoa can be frozen in half-cup portions for later use. Snap lock bags or Freezer Pods work well for this.

    Bring stock to the boil and add Quinoa. Cover with tight-fitting lid and reduce heat to low and allow to simmer for 15-20 mins.

    All the stock should have been absorbed, if not, cook a little longer. Fluff with a fork.
