Sticky Banana, Date and Pecan Loaf

Ingredients

  • 1 1/4 cups Plain Flour
  • 1 tsp bi-carb soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 120g roasted pecans (roast in pre-heated oven for 8 mins), roughly chopped
  • 220g pitted dates (or prunes), roughly chopped
  • 1 cup castor sugar
  • 2 eggs
  • 1/4 cup light olive oil
  • 3 large ripe bananas, mashed
  • 1 1/2 teaspoons vanilla extract

Notes

** If you wanted to make for babies simply omit the pecans.

Method

    Pre-heat oven to 180 degrees and line a loaf tin (23 x 13 x 6cm) with baking paper.

    Combine flour, bi-carb, cinnamon and salt in a large bowl and whisk to aerate. Add dates and nuts and twizzle with your fingers to coat with flour and separate.

    Whisk together sugar and wet ingredients until light and fluffy. Add mashed banana and vanilla and whisk again to combine.

    Combine wet and dry mixes and pour into prepared tin. Mix is very wet. Bake for 1 - 1.25 hours until a skewer comes out clean when tested. Allow to cool 10 mins in pan and then turn onto a cooling rack until you can wait no longer.

    Serve with a cup of tea and good company. Left overs freeze really well for any time you need a pick-me-up.
